         <description><![CDATA[<div><strong>Fats</strong> are just one type of lipid. Lipid molecules do not mix well with water because they are hydrophobic and nonpolar.&nbsp;<br><br>A&nbsp;<strong>fat</strong> molecule (aka <strong>triacylcglycerol</strong> or <strong>triglycerides</strong>) is made of 2 parts: <strong>glycerol backbone</strong> and&nbsp;<strong>3 fatty acid tails</strong>.&nbsp;<br><br><strong>Glycerol</strong> is a small organic molecule containing 3 OH groups.<br><br>A&nbsp;<strong>fatty acid</strong> consists of a long hydrocarbon chain and a carboxyl group.</div>]]></description>
