All original documentation must come on the organisation's official letterhead and signed by someone in the company who has the ability and right to do so.
 From there you can determine the candidates suitability for the role. Grade from qualifications will show their understanding of their work. 
Work Permits need to be on the official letterhead, due to the legality of the person's right to work in the country. It is of absolute importance to ensure that the candidate that you believe is perfect for the position is in actual fact competent and qualified to do so.   Their qualifications can be checked and verified with the NZQA or Professional Registration Board.
