Jake Gyllenhaal is a very experienced actor. He played dying characters before and knows how to switch between being the good and the bad guy. He is exactly what I imagine John Proctor looking like. His previous roles just proved that he is a great actor to work with. His age might not be perfect for the role but since everything else fits so good, I think you could fix that with a little make-up and special effects.
