I found incredible that medicine, for example, was developed in two ways: magic (shamanic) and pragmatic (naturalist). They all used plants for the preparation of the medicines they created. Mathematics was also a science appplied by the Mesoamerican civilization and it was represented by points and bars.

They all domesticated turkeys and dogs. Although they ate animals, animals were still a very important part of their lives and cultures. They ascribed many traits which they observed in animals like the jaguar to their deities. They considered some animals a direct manifestation of the gods ! Also, some animals were only bred for sacrifice and played an important role in religious sacrifice ceremonies. I enjoy the fact that they considered animals so much that they thought them to be a direct manifestation of the gods, even though they ate them...

Dying was not a big deal for them (just like Egyptians). They also had concepts of an overworld and an underworld. And for them, life and death are only steps. I love their way of seeing things and, above all, to play down both death and life. It is so comforting.

They had a complete different concept of beauty than us. They found an elongated scalp attractive. They actually used to flatten newborn babies' soft skull. They also found slightly crossed eyes beautiful, they loved a perfect shaped nose (large) and pointed teeth (they would have inlays of precious stone like jade or turquoise drilled into their front teeth !) and pierced their ears, lips and noses.
It is truly fascinating to me that they were willing to endure so much pain to achieve the "perfect look".
