If the sentence structure was repeated over and over, the sentences would appear more boring and monotone. For example, she sometimes uses longer sentences with lots of commas and clauses followed by a short sentence.

"Patty, the friendly nurse with the diamond engagement ring and a fringe of reddish hair beneath her cap, tells Ashima to consume only the Jell-O and the apple juice. It's just as well."
