How to prepare the meat to the llanera: 

Llanera meat is typical of Colombia, its preparation and consumption is a llanera tradition par excellence, however it is consumed throughout the territory

To start we need the following ingredients:

. 10kg Veal

. 1 beer

. 3lb of yuca 

. 4 bananas 

. Salt

. Wooden sticks (no smell), or iron sticks

preparation:

•First of all, the seasoning of the meat can be done in two ways. You can marinate the meat the day before with salt, seasonings, some spices, and a beer bath, or you can season it the same day using only salt. (The latter is the way in which, it is believed, a true meat is prepared a la llanera).

•Secondly, the cuts of meat are crossed with special sticks for this purpose. These must be placed in the donkey, a special structure that allows the meat to cook in the heat of the embers of the bonfire.

•At the same time, you must make sure that it has enough charcoal, checking frequently, so that the ember is maintained throughout the process.

•Something to add is that the traditional way of roasting meat is on a low fire grill for 4 hours. The fire cannot be stoked because it would burn, and the resulting flavor would not be the characteristic of a good llanera meat.
