Shortening is most often used in baking in order to make products have flaky or crumbly textures. It can also be used in order to preserve freshness of baked goods.
Shortening is a 100% fat ingredient, compared to other ingredients (such as butter or lard) which are only 80% fat. It is made from hydrogenating vegetable oils, and has a high melting point. In recent years, trans-fat was banned from being used in shortening.
Shortening may cause increased risk of heart disease, heart attack, or stroke, arteriosclerosis, increased LDL cholesterol (the “bad” cholesterol), and increases inflammation.
Shortening is not essential, however it does result in many of the pastries people know and love today. Without shortening products will be less flaky and crisp.
Common nicknames include lard, crisco, all-vegetable fat
