Card sort - instead of having students just fill in the answer sheet with letters/symbols, have them sketch the graph and actually write in the answers. (Or you could make it digital on Google Slides so they can have something to look back on.

I liked the example you gave as an intro to the MVT. (When you tell students there are two toll booths 20 miles apart, but they clocked you passing through in only 15 minutes. If the speed limit is 70, did you deserve a speeding ticket?)
