Some types of vaulted ceilings do not have to follow the pitch of a roof and can sit below it, like this groin vaulted ceiling. Some can also have uneven sides. 

An easy way to distinguish vaulted and cathedral ceilings is to think of rectangles and squares. All squares are rectangles, but not all rectangles are squares.
