We bury the dead because, as Catholics, we believe that at the second coming, Jesus will bring all bodies to heaven. By burying a body, we are showing respect for it and allowing Jesus to come to the body and take it up to heaven. Cremation is now permitted by the Church, but it does not have the same value as a burial of the body.
