The first example is because when they had more food than they needed (surplus) so they were able to create more things because they had more time and didn't have to be working all the time. We know this because people have found proof that they started taming animals like wolves and many other animals that they would sometimes eat.
The second way that we know they tamed animals was that people were able to find places where early humans could have kept animals such as wolves, pigs and maybe more .
