         <title>Italian food- Arancini</title>

         <description><![CDATA[<div><sup>Arancini's are the perfect entree for a Sunday night family dinner in an Italian household. In my culture, we serve arancini as an entree meal before the traditional pasta feast. <br><br>Serving size- 18<br>Prep- 30 mins<br>Cooking time- 1hr<br><br></sup><strong><sup>Ingredients: </sup></strong><sup><br>4 cups of salt-reduced chicken stock<br>30g butter<br>1 brown onion (finely chopped)<br>1 cup arborio rice<br>1/2 cup dry white wine<br>1 1/5 cups grated parmesan<br>120g mozzarella<br>2 whisked eggs<br>1.5 cups of panko breadcrumbs<br>1/2 cup of vegetable oil (used for frying) <br><br></sup><strong><sup>Method: <br></sup></strong><sup>1. Prep all ingredients<br>2. Bring the stock to a simmer in a saucepan over medium heat, cover, and keep warm <br>3. Melt butter in a saucepan, add diced onion, and cook for 8 minutes. Add in rice and cook, stirring for 2 minutes. <br>4. Add wine to mix, stir through for 2 minutes (until liquid is absorbed), reduce heat to medium, and add 1 cup of hot stock to the pan. Simmer for 3 minutes until liquid is absorbed<br>5. Continue to cook, stirring til rice is tender and mixture is tender (18 minutes)<br>6. Remove from heat, mix, and stir 1 cup of parmesan cheese. Season with salt/pepper <br>7. Spoon rice mixture over tray, cover, and place in the fridge until cold <br>8. Shape 2 tbs of rice mixture into balls around each piece of mozzarella cheese. <br>9. Place flour and egg into separate dishes, add breadcrumbs to another dish, work in patches, and coat the rice balls in egg/ flour and breadcrumbs. <br>10.          <description><![CDATA[<div><br><strong><sub>Country Focus: East Asia</sub></strong><sub><br>The three common health concerns I have chosen that refugees from East Asia may present upon immigrating to Australia include Malaria, Mental Health, and Intestinal Parasites. <br><br></sub><strong><sub>Intestinal Parasites</sub></strong><sub><br>Intestinal parasites are most common in tropical areas such as East Asia. The prevalence of these parasites reflects their socio-demographic and environmental circumstances. One treatment for intestinal parasites is a medication called Albendazole. <br><br></sub><strong><sub>Mental Health <br></sub></strong><sub>When refugees arrive in Australia after fleeing their home countries, they experience trauma, torture, and sexual and physical abuse, drastically damaging their mental health. Mental health issues may also arise from their time in immigration camps/detentions. A treatment option for mental health for refugees includes referral to an appropriate doctor who can assess and prescribe individual medications and therapy intervention. <br><br></sub><strong><sub>Malaria<br></sub></strong><sub>Refugees arriving from East Asia may present with malaria. Malaria is a mosquito-spread infection most common in tropical areas. Refugees who present to Australia with a positive test result are treated with a 3-day course of ACT before departure is allowed. Italians view soccer as a tradition that is always in their hearts. For Italian children, they see soccer players as heroes who always put up a fight and bring back a win for their country. I believe I will endeavor to apply standard 12.3 by expanding my current knowledge of ways to communicate and care for individuals in ways that benefit their beliefs/ values. I will be able to apply person-centered care and family-focused care as a nurse by ensuring all individuals involved feel respected, acknowledged, and listened to. As a future nurse, I will ensure I provide care that includes access and equity, quality and safety, dignity and respect, and effective communication that ensures each individual feels equal/ listened to and treated with the utmost respect. In my future career as a nurse, providing high ethical standards will build the foundation of the care I will be providing.
