         <description><![CDATA[<div><strong>Loaded Zucchini Bread, Submitted by Jennie Wiley<br></strong><br></div><div>Filled with delicious spices, fruit and nuts - a perfect harvest and Thanksgiving treat!<br><br></div><div><strong>Ingredients:<br></strong><br></div><div>3 eggs<br><br></div><div>1 c melted butter<br><br></div><div>2 c sugar<br><br></div><div>3 c flour<br><br></div><div>1 t salt<br><br></div><div>1 t baking soda<br><br></div><div>3 t cinnamon<br><br></div><div>½ t baking powder<br><br></div><div>½ t cloves<br><br></div><div>½ t nutmeg<br><br></div><div>2 c grated zucchini, drained well<br><br></div><div>3 t vanilla<br><br></div><div>1 c chopped nuts<br><br></div><div>1 c raisins<br><br></div><div>1 can crushed pineapple, drained<br><br></div><div> <br><br></div><div><strong>Directions</strong>:<br><br></div><div>Beat eggs until fluffy.          <description><![CDATA[<p>My husband and I both love Korean food, especially 반찬 ("pan-chan"), the small side dishes traditionally served with Korean meals. Here's one I made recently that I absolutely love:</p><p><br/></p><p><strong>Ingredients:</strong></p><ul><li><p>10 mini cucumbers</p></li><li><p>1 tbsp salt</p></li><li><p>1 green onion, sliced</p></li><li><p>2 tbsp gochugaru (Korean chili flakes)</p></li><li><p>3 tbsp rice vinegar</p></li><li><p>3 garlic cloves, minced</p></li><li><p>1 tbsp sesame oil</p></li><li><p>1 tsp sugar</p></li><li><p>1 tbsp sesame seeds</p></li></ul><p><br/></p><p><strong>Instructions:</strong></p><ol><li><p>Place cucumbers between chopsticks and make diagonal cuts on one side, then flip and cut the other side to create spirals.</p></li><li><p>Toss cucumbers with salt, let sit for 15 minutes, then rinse and pat dry.</p></li><li><p>Mix cucumbers with garlic, green onion, gochugaru, rice vinegar, sesame oil, sugar, and sesame seeds. Stir gently, ensuring seasonings reach all crevices.</p></li><li><p>Taste, adjust if needed, and enjoy!</p></li></ol>]]></description>

         <description><![CDATA[<p>2 Avocados </p><p>1/2 Lime</p><p>1/4 cup Mayo</p><p>1/4 Greek Yogurt </p><p>1-2 chicken breasts cooked and shredded (or rotisserie chicken) </p><p>Garlic Powder (to taste)</p><p>Salt/Pepper (to taste)</p><p><br/></p><p>Start by mashing the two avocados in a bowl. Add about 1/4 of a lime worth of juice, Greek Yogurt, mayo, garlic powder, salt, and pepper and mix well. Next, add in the shredded chicken and coat the chicken in the avocado mixture. Taste and adjust lime and seasonings to your preference. Eat with chips, a tortilla, or on a pita! </p>]]></description>
