HINAVA written by Hazel Annabelle Pierre @ Roy

In Malaysia, we have many different types of traditional cuisine. My personal favourite traditional food is Hinava. Hinava is a traditional dish of the Kadazan-Dusun people in the state of Sabah. It is one of the most famous traditional food in Sabah. Hinava is most likely to be called the Kadazan-Dusun version of sashimi. The main ingredients of Hinava are fish, bird's eye chili, salt, lime juice, red onion, bittergourd, shallot and tobacco. It is very easy to prepare Hinava. This is due to the fact that the minced fish will be marinated with lime juice long enough to be cooked. We don't have to cook the fish with a flame but make sure to wash the raw ingredients thoroughly beforehand. Hinava has a sour and spicy taste. Both the taste combine perfectly. I am hoping that you will try my favourite traditional food in the future.

Laksa sarawak is very famous , almost every restaurant in sarawak has such a menu and it becomes the main menu in the restaurant .

Laksa sarawak is a famous sarawak noodle like a normal curry laksa. However, the sarawak’s version of this dish is slightly subtler compared to the normal curry laksa. This curry it is made using a laksa paste consisting of sambal belacan, tamarind, lemograss, herbs and spices with a little coconiy milk. That’s why it has a fine balance of aromatic herbs and spices with a subtale hint of soutish and chili note and note overly rich and creamy

Laksa sarawak usually consists of rice vemicell , omelette , strips , shredded chicken , beans prouts , prawns , fresh coriander and lime . As a local, i don’t think that i can choose which is my favourite food since all of the traditional cuisine tastes good. But in my opinion, the most and the highest rank is, chicken rendang. We usually call it 'Rendang Ayam'. This is the most important dish when it comes to Hari Raya. We always eat chicken rendang with ketupat. It was a great combination.
Chicken rendang is a chicken stew with spices and coconut milk. Rendang originated from Indonesia but they are very popular and well loved by many in Malaysia. Chicken rendang is slow cooked and stewed in the rendang sauce. This chicken rendang is so rich in flavours and spices that you will never have enough once it’s cooked. The spices used in cooking this dish also serve as natural organic preservation and together with the slow cooking of the chicken, this flavourful dish can be kept for a long time.
I hope by telling you the uniqueness of chicken rendang, you will try it someday in the future. This is the best dish for me especially during Hari Raya. You will never get over it, i guarantee it.

Written by : Gill Denevon

There are many traditional foods in Malaysia. Traditional food and dishes are traditional in nature , and may have a specific history. One of them is Rendang. Rendang is one of the traditional foods of the Minangkabau people in Negeri Sembilan. Rendang is a meat dish traditionally with beef as the main ingredient. But what truly makes rendang "rendang" , is the ingenious mixture of herb and spices. This long list of flavoring includes galangal , lemongrass , coriander and more. Coconut milk is also a defining ingredient , infusing the meat with a deep fragrance. Cooking rendang is a marathon , not a race. The chunks of meat are cooked in a low heat for over six hours , allowing the coconut milk and spices to seep in and thicken. This lengthy process dries yet tenderises the meat , allow the seasoning to really permeate its layers. The end result is a thick , dry curry , best served with plain white rice and eaten with your hands.
