.- Light the oven to 175º C. Line the base of a mold of 22 cm in diameter and grease it with a mold or butter spray.

.- Separate egg whites and yolks in two bowls.

.- Beat the whites with a pinch of salt. When they are white, add half the sugar and continue beating until you get a firm meringue. Reservation.

.- In the bowl of the yolks, pour the water and the oil, add the rest of the sugar, the grated lemon and a teaspoon of vanilla essence. Beat well. Mix the yeast or baking powder with the flour and sieve over the bowl of the yolks. Beat everything until you get a pretty thick dough.

.- Gradually add the egg whites to the mixture of yolks and flour, making enveloping movements with the spoon, so that the air that we have managed to introduce when assembling the whites does not escape. Once you have the dough completely homogeneous, pour it into the greased mold.

.- Introduce the mold in the preheated oven at 175º C and bake for 55 minutes. At 45 minutes it is convenient to open and move the mold a little to verify that the cake does not "shake". If you have seen the top part moves, it is raw: DO NOT PICK IT OR YOU COULD DEFLATE. If it is already firm at the top (see the video). If the skewer comes out wet, it leaves more time and is verified every 5 minutes.

.- Once it is completely done, remove the sponge cake oven and let it fall on the marble giving a sharp blow, but without adding force. Peel off the edge if it has been glued and unmoulded. If you want to have the smooth one like the one in the image, unmold it by turning it upside down, turned over. Unmolding in this way, we will obtain a spongy basic sponge cake perfect to decorate and turn it into a delicious cake.

.- If you are going to eat it without decorating, you can wait for a little sugar. To distribute it well, sprinkle through a colander. You can also prepare fruit accompaniment or a few ounces of chocolate.
