Why is Arabic food so good?

Vegetables, spices, herbs, and grains make up a huge part of Arabic cuisine. There is meat in many of the region's recipes, but pork is not one of them due to halal and kosher laws. Lamb and other meats are often cooked as kebabs on skewers or as vertical rotisserie–cooked shawarma. Arabic cuisine is one of the healthiest, since it incorporates lean proteins, healthy fats, vegetables, and grains into almost every dish. Rich spices, seeds, and herbs (notably za'atar and cumin) sets it apart from European cuisines. Dishes include olive oil, za'atar, and garlic, and common dishes include a wide array of mezze or bread dips, stuffings, and side dishes such as hummus, falafel, ful, tabouleh, labaneh, and baba ghanoush.
