I think they were only people in the neighborhood helping the family out by making the kids believe in that it was a real funeral for Aunt Birte.
2. They created the death of Aunt Birte to make the kids feel better and braver than if they really knew who laid in the coffin. Like the Johansens I think they are against the germans and want to fight them as well. Maybe they've lost someone  in the war and wants revange or maybe just help everyone in need. People that don't have anyone maybe feel the need to have someone in these tuff times therefor they all meat up at uncle Henkriks. 

2. So she would stay brave threw the war and not lose hope. She learns that nowing the whole story ma result in you losing hope.

I think that the black dressed people arriving at Henrik's house are actually fellow Danish- Jewish people, just like Ellen, getting help from Henrik to escape the nazi occupied Denmark. Since the people in the room are very nervous, just like Ellen, because they are going to do something that they know is dangerous. 

2.  I think that the death of aunt was just a cover-up for something bigger. Some sort of helping/rescue mission for the Jewish people. I think that the people that was arriving at the funeral were actually Danish jews that are fleeing from the german troops looking for them, and this funeral is actually a meeting. The seramony is just a way for them to have an exuce for getting on a boat that they can use to get out of Denmark and into Swedish waters where they would be safer.
