Leafy Vegetables!

Theres also Leafy Vegetables! Leafy vegetables carry tons of non-heme iron, meaning that it is much less well-absorbed than heme found in animal meat like cows and chickens!! Only a small amount of non-heme iron can be used by our body which means we need bigger and larger quantities to help us. The darker the leaf on the vegetable the more packed it's gonna be with phytochemicals (practically the plant's immune system just like you and I have!), along with a ton of minerals and vitamins. For comparison, a 1,700-calorie steak and 100-calorie spinach have the same amount of iron.

Alex was never one for eating vegetables. Every night at dinner

his mom would cook these amazing meals but he would never eat

the vegetables. "Vegetables keep you strong!" his dad would say,

but Alex didn't care. He didn't like vegetables and convinced himself

he never would. His mom and Dad sat down and thought about how

they could make Alex eat vegetables. They decided to sit Alex

down and tell him all the good things in vegetables and all the good

things vegetables can do for your body.

Brassicas

His parents sat him dad and began. Brassica's can help help fight cancer! They are rich in phytochemicals such as carotenoids, polyphenols, and particularly isothiocyanate and indoles. As isothiocyanate and indoles are as well anti-inflammatories they are thought to help fight cancer by triggering apoptosis, also known as akin to cellular suicide which shows that the cells kill themselves. cancer cells usually don't take notice of signals for when cells die, so setting off apoptosis can destroy tumors! Brassicas are low in starch, and sugars but are high in vitamins.
