         <description><![CDATA[<p>Ingredients</p><ul><li><p>1 cup Milk, warm</p></li><li><p>1 package {1/4 oz} Active Dry Yeast</p></li><li><p>2 tablespoons Honey</p></li><li><p>4 tablespoons Unsalted Butter, melted</p></li><li><p>1 1/2 cups Mashed Potatoes {About 3 large potatoes, boiled and mashed.}</p></li><li><p>1 tablespoon Kosher Salt</p></li><li><p>4 cups Flour, plus more for dusting</p></li><li><p>2 whole Green Onions, thinly sliced crosswise, for garnish</p></li></ul><p>Directions</p><ul><li><p>STEP 1Preheat oven to 400 degrees F. Line a sheet pan with parchment paper and spray with nonstick cooking spray.</p></li><li><p>STEP 2In a mixing bowl or your stand mixer combine the warm milk, yeast, and honey. Let stand for 15 minutes until mixture looks foamy and puffed. Add the melted butter, mashed potatoes and kosher salt and combine. Slowly start incorporating the flour, one cup at a time. Mixture will be tacky and elastic looking. If too wet add a little more flour.</p></li><li><p>STEP 3Knead dough for 10 minutes. Turn dough out onto a floured surface. Knead by hand for few minutes. In a separate bowl, drizzle in a little olive oil to coat the inside of the bowl. Place the dough in the bowl and roll in the olive oil to coat. Cover with plastic wrap or a towel and let rise in a warm place until doubled in size, about 30 minutes.</p></li><li><p>STEP 4Roll out onto a lightly floured surface into a 12” x 12” square. Cut into twenty-four 2½” squares, re-rolling dough as needed. Bake on a parchment paper lined baking sheet until golden brown, 20 minutes. Remove and garnish with green onion. Serve warm with plenty of Irish Kerrygold butter.</p></li></ul>]]></description>

         <description><![CDATA[<p>Conor Anthony McGregor was born on July 14, 1988, in Dublin, the capital of Ireland. Known for his aggressive fighting style, McGregor aims to be the dominant force in his bouts.</p><p>McGregor began his MMA career in 2008. In 2012, he became the featherweight and lightweight champion simultaneously in the Cage Warriors organization. After signing with the UFC, he vacated both titles. In 2015, he knocked out Jose Aldo in just 13 seconds at UFC 194 to become the UFC featherweight champion. This knockout remains the fastest in UFC title fight history. In 2016, McGregor became the lightweight champion by knocking out Eddie Alvarez at UFC 205, making him the first fighter in UFC history to hold titles in two different weight classes simultaneously.</p><p>McGregor's professional boxing career started in 2017. In his first fight, he lost to Floyd Mayweather Jr. McGregor is also known for being the most popular figure in MMA history. Four of the top six highest-grossing PPV shows in UFC history featured McGregor in the main event. His UFC 202 showdown with Nate Diaz, which sold 1.65 million PPVs, became the highest-grossing MMA event ever. His boxing match with Mayweather also sold 4.3 million PPVs in North America, the second-highest PPV sale of all time.</p><p>McGregor began building his UFC foundation at the age of 12 with boxing and kickboxing. As a young athlete, he became the boxing champion of Ireland. In 2007, McGregor knocked out Kieran Campbell in his first MMA fight. In 2013, he won his first UFC fight by knocking out Marcus Brimage. He then knocked out Max Holloway, Diego Brandao, Dustin Poirier, and Dennis Siver, drawing global attention.</p><p>After Jose Aldo's injury, McGregor faced Chad Mendes for the interim UFC featherweight title and became the interim champion by knocking out Mendes. He then faced Aldo and won the fight in 13 seconds, securing the UFC featherweight belt.</p><p>In 2016, McGregor was scheduled to fight lightweight champion Rafael dos Anjos, but after dos Anjos announced his injury, Nate Diaz became his opponent.</p><p>On March 5, 2016, at UFC 196, McGregor lost to Nate Diaz, marking his first UFC loss. On August 20, 2016, at UFC 202, McGregor defeated Diaz by decision and returned to the lightweight division.</p><p>On November 12, 2016, McGregor faced Eddie Alvarez for the UFC lightweight championship and knocked him out in the second round. With this victory, McGregor became the first fighter in UFC history to hold two titles in different weight classes.</p>]]></description>

Austria is especially known for its classical music, folk music, baroque architecture, coffee culture, winter sports and Alpine traditions. Austria is historically a strongly Catholic country and was the center of the Habsburg monarchy (1273–1918), which professed Roman Catholicism. The predominant language in Austria is Austrian German, but the region has historically had a diverse linguistic landscape.          <description><![CDATA[<p>My students and I planned, organised and celebrated Intercultural day at our College, February 7th, 2025. We organised students to collaborate on their culture to present traditions on the day.  We also converted a classroom into a French café, designed a French menu, cooked traditional French cuisine on the day. This was a French speaking space where everyone that entered was encouraged to try the language. Other countries involved were Spain, Portugal, Italy, Ireland, Lithuania and Afghanistan.  Other world countries to include African, Asian and American were also welcomed.</p>]]></description>
