Préparez la polenta avec la farine de mais et la farine de pois chiches, 1,25 litre d'eau et thym et un peau de sel. Cuisinez, mélangez.
Quand la polenta sera prête incorporez  le mélange de beurre avec une cuillère en bois jusqu' à ce qu' il soit parfaitement mélangé. Versez la polenta dans un moule huile avec le dus d'une cuillère humidifiée; mettez-la à niveau et laissez refroidir pendant 3 minutes.
Une fois refroidie étalez la polenta sur une grande surface et divisez-la en tranches d'environ 1 cm d’épaisseur. Décollez les pétales de rose les nettoyez-les délicatement avec un linge humide.
Melangez la robiola avec le fromage ricotta, le thym et un peu de poivre dans un bol. Faites griller les tranches de polenta sur une grille et ajoutez des cuillères la crème
