Merry Christmas

• 225g plain flour, plus extra for dusting

• salt

• 2tsp bicarbonate of soda

• ground ginger

• cinnamon

• 75g unsalted butter

• 100g soft brown sugar

• 100g golden syrup

• Heat oven to 190C line a baking tray with baking parchment. Sieve the flour, salt, bicarb, ginger and cinnamon into a large bowl. Heat the butter, sugar and syrup until dissolved. Leave the sugar mixture to cool slightly, then mix into the dry ingredients to form a dough. Chill the dough in the fridge for 30 mins.

• On a surface lightly dusted with flour, roll out the dough . Stamp out the gingerbread men shapes. Place your gingerbread shapes on the lined trays, allowing space for them to spread. Bake for 10-15 mins, then remove from the oven and leave to cool.

• Start by boiling unpeeled potatoes and 3 carrots, peeled, in salted water. At some point also hard boil 2 eggs.

  
  

• Chop up an onion into a small cubes. The carrots are done once they get soft. Slice the carrots into a thin quarter circle wedges. Also chop up the pickles

  
  

• Combine vegetables in a pot

  
  

• Take out the potatoes when they are almost cooked through. Peel them, dice them and add to the pot.

  
  

• Now stir in mayo.

  
  

• Finally, cut up the eggs and mix into the salad. Add salt and black pepper to taste. Let sit in the fridge for few hours before serving.

New Year holds special significance for many families in Turkey. In the evening, we gather with our families to enjoy a special meal together. Following that, a menu featuring traditional Turkish pastries, stuffed grape leaves, and güllaç (a traditional Turkish dessert) is prepared. We decorate our homes with colorful lights and New Year ornaments, creating a festive atmosphere.

On New Year's Eve, we watch special programs on television and count down the seconds. When the clock strikes midnight, we joyfully welcome the new year with our families. Then, we add excitement to the night by watching fireworks displays from our home's balcony or window.

Dancing to traditional Turkish music, we celebrate the New Year with our loved ones. On New Year's Eve, we exchange heartfelt wishes, leaving the past behind and stepping into a new beginning. Hopefully, the new year will be filled with health, happiness, and success.

A traditional Turkish New Year's Eve dinner often includes turkey, after which families play games while waiting for midnight. As the clock strikes twelve, there's a nationwide countdown.
