Instead, her family and herself eat conch, an extremely popular and national dish of the Bahamas. Then, the author talks about some history of the island that is given by her tour guide. She discusses how the food is heavily influenced by the history of the vast majority of Bahamians, as many are descendants of former slaves who brought West African culture and American South food influences to the Bahamas, seen in dishes such as peas 'n rice.
