         <title>Staple Indian diet</title>

         <description><![CDATA[<div>In India, "khichdi" is a much adored dish that is frequently consumed during times of illness due to its simple digestion and high nutritional value. Surprisingly, khichdi was the majority of the diet for approximately half of the Indian people during the 16th century. This is incredibly healthy, and delicious meal. The main ingredient in this recipe is rice, which is well-known for its probiotic qualities, which encourage the growth of healthy gut bacteria. <br>Recipe below<strong><br><br>Ingredients</strong></div><div><br></div><ul><li>2 1/2 tbsp ghee</li><li>2 tsp cumin seeds</li><li>2-3 long dried red chilies</li><li>18 fresh curry leaves</li><li>1 large brown onion, finely chopped</li><li>5 garlic cloves, crushed</li><li>4cm-piece fresh ginger, peeled, freshly grated</li><li>2 tsp garam masala</li><li>1 tsp ground turmeric</li><li>1 large tomato, finely chopped</li><li>200g (1 cup) basmati rice, rinsed</li><li>210g (1 cup) red split <a href="https://www.taste.com.au/recipes/collections/lentil-recipes"><strong>lentils</strong></a>, rinsed</li><li>2.5L (10 cups) water</li><li>1 bunch English spinach, trimmed, chopped</li><li>2 tbsp lemon juice</li><li>&nbsp;1/2 tsp cooking salt</li></ul><div><br><strong>Method&nbsp;</strong></div><ul><li>Heat the <strong>ghee</strong> in a large saucepan over medium heat. Add the <strong>cumin</strong> and <strong>chili</strong>. Cook, stirring, for 1 minute or until aromatic. Add the <strong>curry leaves</strong>. Add the <strong>onion</strong>. Cook, stirring occasionally, for 4 minutes or until softened. Stir in the <strong>garlic</strong> and <strong>ginger</strong> for 2 minutes or until aromatic. Add the <strong>garam masala</strong> and <strong>turmeric</strong>. Stir in the <strong>tomato</strong> for 3 minutes or until softened.</li><li>Add the <strong>rice</strong> and <strong>lentils</strong> to the spice mixture. Stir to combine. Add the <strong>water</strong> and bring to a simmer. Reduce heat to low. Cook, stirring often, for 40 minutes or until the rice and lentils break down.</li><li>Add the <strong>spinach</strong>, <strong>lemon juice</strong> and <strong>salt</strong>. Season with pepper.          <description><![CDATA[<div>&nbsp;Country focused - <strong>Afghanistan </strong>which was known as ancient Ariana (Aryana), located in Central Asia. Afghan refugees are the third-largest displaced population in the world. The Afghanistan War, starting in 2001 had three phases. First, the swift ousting of the Taliban. The second phase (2002-2008) aimed to defeat the Taliban and rebuild Afghan institutions. The third phase, starting in 2008, saw a shift to counterinsurgency, intensified by President Obama's troop increase in 2009.(Witte, 2021)<br><br></div><div>Through 2026, the offshore humanitarian program will offer 26,500 designated visa spots for Afghans to immigrate to Australia. (Australian Government, 2019). <strong>Hepatitis B, intestinal parasites, and latent tuberculosis </strong>infection are three frequent health issues that are likely to be present in refugees arriving from Afghanistan, according to the Australian refugee health practice guide. <br><br>&nbsp;<strong>Intestinal Parasites</strong>: <br>The frequency of pathogenic intestinal parasites among refugees varies depending on factors including origin and access to treatment, with rates ranging from 15% to 40% and Giardia being the most common. The only accessible treatment for refugees is stool microscopy, which is advised if symptoms were present. 90% of parasites are detectable in one stool sample.<br><br><strong>Hepatitis B</strong>:<br> Over 50% of chronic hepatitis B cases in Australia go undiagnosed due to the disease's higher prevalence among immigrants, which affects an estimated 220,000 Australians. Sub-Saharan African refugees in Melbourne have high incidence of hepatitis B, which highlights the need for better testing and awareness campaigns. A care strategy for HBV-positive refugees should include clinical reviews, LFTs every six months, and HBV viral load tests every year.<br><br><strong>Latent tuberculosis infection:<br></strong> To stop the spread of the sickness, lower prevalence, and save lives, the National TB Advisory Committee in Australia encourages rigorous testing and treatment, especially for immigrants from countries with a high incidence of TB. Since latent TB typically affects immigrants and has a 5-year activation rate of 5–10%, early diagnosis is crucial. Specialized screening and management are crucial due to varying LTBI prevalence among refugee groups.<br><br><br><br></div><div><br></div><div><br><br></div>]]></description>
