Stars found inside of elliptical galaxies are on average much older than stars found in spiral galaxies.

How it's formed -
the Milky Way is due to crash into the Andromeda Galaxy in a few billion years. When two spirals collide, they lose their familiar shape, morphing into the less-structured elliptical galaxies.

Irregular galaxies do not fall into any of the regular classes of the Hubble sequence, and they are often chaotic in appearance, with neither a nuclear bulge nor any trace of spiral arm structure.

How it was formed-
 It seems that they are typically formed through gravitational interactions and mergers of other galaxies. Most, if not all of them began life as some other galaxy type. Then through interactions with each other, they became distorted and lost some, if not all of their shape and features.

Examples-
The best known examples of irregular galaxies are the Small and Large Magellanic clouds. These are companion galaxies to our own Milky Way, and can be easily seen at dark sites in the Southern Hemisphere.
