The structure is probably used for the cell membrane which is used typically not only to encompass the cells materials but to also control what transfers in and out of the cell. In terms of putting the waste out of the cell and allowing the nutrients into the cell.

The "fluid mosaic" means that many there are many types of molecules that are held together through the membrane and the cell membrane is made up of different parts working together as there a many different parts like a mosaic that all come together and makes up the cell membrane.

I don't know what a fluid mosaic model is. But I believe it means that the structure is a fluid layer that protects the things that are inside of it.

Since its referred to as a mosaic piece, the structure of the cells and the phospholipids tails pointing towards each other might look like a mosaic type design. And the fluid part might be refereeing to the nutrient passing through the membrane.
