Amy's mom was telling Amy how she shouldn't be ashamed of her culture and that she doesn't need to change for anyone.
Amy's mom was trying to teach Amy that she should love her culture instead of being ashamed and hiding it.

Throughout the story Amy seemed worried about the food her mom has made and what the minister son would think of their weird Asian cuisine.

She was describing the food as disgusting and strange. She was seeing the food from an American person's point of view, even though these are her favorite foods. She just wanted to fit in. In "Fish Cheeks", the tough questions Amy asked were " What would Robert think of our shabby Chinese Christmas?", "What would Robert think of our noisy Chinese relatives who lacked proper American manners?". This question makes wonder why she doesn't love who she is as a person, and don't understand why she needs to change her personality for some guy.
