I would simply ignore the T&Cs as they way too long and I'm not a lawyer.

Possible consequences could include corporations having access to personal data that I would prefer not such companies to have access to such as my location and contacts.

Lawsuits involving breach of privacy and usage and collection of personal data would technically be hard to challenge due to it being the user's responsibility to read and acknowledge the T&Cs.

App developers use the information to figure what kind of people you interact with mostly as well as what kind of things you like to determine what ads they should send you to ensure that their ads get the most amount of revenues possible
It makes me feel uncomfortable as they are invading our privacy. We are constantly being watched without us knowing about it, meaning whatever we say at any time could be used against our will, whether for good of for worse, especially if it is for negative reasons.
This isn't right, as we should be able to freely use the internet without the fear of companies watching our every move.

I feel that this method is a little unethical as these people are using information about you just to earn money through more ads that are especially tuned just for you.
