    1. Lettuce is manually harvested before it reaches full maturity, to prevent flowering and loss of nutrients from the leaves.
    2. Ancient Egyptians cultivated lettuce 6.000 years ago. It was important part of their diet, based on the paintings in the tombs of many Egyptian rulers.
    3.Americans consume 30 pounds of lettuce per person each year.

Our lettuces in the artificial light showed more growth relative to the starting mass and height than our lettuce in the sunlight. Within the first week the lettuces under the artificial light had grown three times the original height and 116% times the original mass.
