A technique that I am unclear of is what the difference is between saving as Rich Text as opposed to Plain Text Format.

Good question, here's the difference:
Plain text contains no formatting, only line breaks and spacing. No text formatting like font sizes and colors, bold or italics will be used.

A feature I learned in Module 1 is to turn on and off the live feature, also resizing of apps. Now what I was unclear about in Module 1 was why my Window 10 was set up different than what the book had. I couldn't find the all apps and the jump list features. Also when I was to download the free app Wikipedia my app store didn't look the same and it wanted to charge me. 

Module 2
In Module 2 I learned how to create different type of documents and I learned the difference between rich text and text documents.
What was unclear to me is how to get the text document feature.
