A dish from Germany: Spaetzle

The basic recipe I use is a very simple one, though I have seen others that vary mainly in garnishment. You will need:
1 cup flour (any kind should work, maybe you should try a fancy one, I just use white flour)
1/4 cup milk
2 eggs
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 tablespoons butter
a pinch of freshly ground pepper (this is totally optional, though again, try something fancy like white pepper)
a gallon size zippered plastic bag (or a pastry bag if you have one)
In the plastic bag, mix the flour, salt, nutmeg, and pepper if you are using it. If using a pastry bag just mix in an appropriate sized bowl.
In a separate bowl, beat the eggs and mix in the milk.
Pour the milk and egg mixture into the plastic bag, zip it up and knead it until thoroughly mixed and sticky.
Then you will need a very very large pot I mean pretty big here, we're talking like a gallon of water.
Try and smoosh all the dough into one corner of the bag, even if you doubled the recipe (you'll probably want to once you try it) there should be plenty of room in the bag. Once it's all on one side, clear the very tip of the corner (pic 2), and cut it off (pic 3.) The smaller the hole, the smaller the dumplings (that's how I like it.) Keep in mind that the hole will stretch over time, and the longer you let the dumplings cook will also determine their size.
Gently squeeze the dumplings into the simmering water. I try not to make them too long. Let gravity help you. They will sink to the bottom and when they are done, they will float to the top. Use a slotted spoon to scoop them out and place into a frying pan. Also, clean your stove and counters before taking any pictures.
Add the butter to the frying pan with the spaetzle. If you are making more than the recipe states, you may need to do more than one batch, or use a larger frying pan. Now, turn the heat up to medium or medium-high and saute the spaetzle in the butter until it is a nice golden brown color.

Friday 6 January: Epiphany (Heilige Drei Könige or Holy Three Kings) (R) – Baden-Württemberg, Bavaria, Saxony-Anhalt.

Although the Germans do celebrate Christmas, they also celebrate Epiphany or the celebration of the visit of the three wise men to Jesus. Epiphany is a public holiday in which most people visit the a church service and the Nativity scene is everywhere. And many children learn about the story of Christmas and the three wise men to later act out the whole scene. Epiphany also takes ideas from Halloween and Christmas when children go around dressed as the three wise men and sing hymns, and usually when people open their doors they will be asked to donate to a charity the children have chosen.

Germany has brought many ideas and practices into American culture, one being the famous Oktoberfest. Germany has greatly influenced our education system and in fact, in 1855, Germans made the first kindergarten and later introduced vocational and physical education. Germans have also created the American weekend. Sundays have always been recreational days for the Germans, so when German immigrants came to the U.S they brought the idea with them. The Germans even introduced and popularized the Easter Bunny, Santa Clause, and the Christmas tree.

The German culture is very interesting and has, in fact, surprised me in a few ways. Germany has brought many new ideas and practices in our country, some I thought were originated in America, such as a few factors in our education system, mainly the kindergarten in 1855. The other fact that surprise me the most about Germany was Epiphany the German holiday because it mixes two holidays we celebrate here in America, Christmas and Halloween, due to the fact that children dress up as the three wise men and sing hymns around the neighborhood, which sounds similar to the practice of dressing up in costume on Halloween and serenading people with Christmas carols. Over all, learning about this new culture has been very enlightening and has taught me about the history of some of the practices and ideas I thought were originated in America.
