Quelle est la date aujourd'hui? What is the date today?

Your response should be: C'est le trente et un janvier.

Notice : C'est + le + # + month.  Months and Days of the week are never capitalized in French.

If you didn't need to write in sentence form....and just the numbers:  31/1/2018.
