The dish most known in Hokkaido is Ishikari-nabe, it consists in a whole salmon, from head to tail. Its name comes from the river Ishikari-gawa, known for the salmon that is fished there. Portions of salmon are cooked with vegetables, tofu and konnyaku in a seaweed broth flavored with miso.

These octopus balls, called Takoyaki, are made by pouring a mass of pancakes into the bottom of a special cooking mold, then add small pieces of octopus, onion and chopped cabbage and a little marinated ginger. They must be turned constantly during cooking to form pellets. This is an appetizer that is often found in Osaka as a snack on the streets of Osaka.
Here I left a video of how it is made.

Monja-yaki is one of my favourites and it is also a dish for children par excellence given that they used to eat as snack in the afernoon. It is very tipical in Tokyo.
First, basal ingredients such as squid pieces, corn kernels, or chopped cabbage are heated. Then a crown is made with the ingredients in the edges and then you spread a crepe mass very liquid in the center.
This is the result... It may seem a little bit messy but it is very cheap and very yummy!

The Sanuki udon found in the Kagawa prefecture is known as the "udon kingdom" due to the numerous manufacturers and restaurants specializing in these wheat noodles.
The noodles are covered with a broth of seaweed seasoned with soy sauce and served in soup. The soup can be seasoned with various ingredients, such as seafood or vegetable tempura. In many small restaurants you can taste a bowl of sanuki udon for a price of between 100 and 200 yen.

These are definitely my favourite dishes divided by regions, but it would be a sin if I do not mention some japanese desserts that are absolutely delicious. Most Japanese sweets belong to the family of sweets called wagashi. These are a traditional Japanese treat that is often served with tea, and is made mainly with mochi (glutinous rice cake), anko (sweetened sweet bean paste) and fruit. Take into account that desserts are normally common to all regions. It is equivalent to what it would be cookies and tea in England. My favourites are daifukumochi, mitarashidango and dorayaki.

It consists in a crepe in six levels: dough, chopped cabbage, noodles and, finally, the special sauce.

Fugu or blowfish is a very complicated dish, given that some species of this fish contain a deadly poison, therefore it can only be prepared by chefs who have obtained a special license to ensure that they have been trained to carefully remove the part containing the poison. Basically you eat this dish as sashimi (thin slices of raw fish).

The varieties of dango are usually called according to the various condiments that are served on them or with them.

I think y'all know what a dorayaki is (the favourite sweet of Doraemon!) but most people is mistaken in what is inside the "sponge". As a kid I thought that it was chocolate, but then I discovered that it was the anko mentioned before, a type of japanese bean. Dorayaki is a type of Japanese sweet that consists of two round-shaped cupcakes with an anko filling. Usually they are usually sweet bean paste but can also be chestnut.

Lucky you! You can find all of this in Madrid in the restaurants that I'm going to recommend you!
My top three:
Mi favourite one is Sumo. The menu costs around 13€ and you have the right to eat 15 dishes, choosing from a menu of 72 different types of dishes.
The second one is Ramen Kagura. It is a chain of restaurants whom Japanese owners dedicated themselves to the same thing back in Japan. Their specialty is ramen, although they also have the takoyakis mentioned above.
Finally my favourite one is Happy Sushi. It is a neighborhood restaurant, very modest, but with a high quality sushi at a very good price. If you like sushi this is your place!
