My choice to be Plant-based is a part of my American culture.<br><br><br><strong>The Ultimate Vegan Chocolate Cake</strong></div><div><br></div><div> Author: It Doesn't Taste Like Chicken<br><a href="http://itdoesnttastelikechicken.com/2015/11/21/the-ultimate-vegan-chocolate-cake/">http://itdoesnttastelikechicken.com/2015/11/21/the-ultimate-vegan-chocolate-cake/</a></div><div><br></div><div> Prep time:  20 mins</div><div> Cook time:  40 mins</div><div> Total time:  1 hour</div><div><br></div><div> Makes: 1 two layer cake with frosting</div><div> </div><div>Ingredients</div><ul><li><strong>Dry Ingredients:</strong></li><li>2½ Cups All Purpose Flour</li><li>2½ Cups White Sugar</li><li>1 Cup Cocoa Powder</li><li>1 teaspoon Baking Powder</li><li>½ teaspoon Baking Soda</li><li>1 teaspoon Salt</li><li><br></li><li><strong>Wet Ingredients:</strong></li><li>2⅔ Cups Non-Dairy Milk of Choice (I used soy)</li><li>⅔ Cups Light Oil (such as canola or vegetable)</li><li>2 Tablespoons Apple Cider Vinegar</li><li>1 Tablespoon Vanilla Extract</li><li><br></li><li><strong>Frosting Ingredients:</strong></li><li>½ Cup Vegan Butter (Such as Earth Balance)</li><li>½ Cup Vegetable Shortening (see notes)</li><li>1¼ Cup Powdered Sugar</li><li>¼ Cup Cocoa Powder</li><li>1 teaspoon Vanilla Extract</li><li>1 - 2 Tablespoons Non-Dairy Milk (if needed)</li></ul><div><br></div><div>Instructions</div><ol><li><strong>To Make the Cake:</strong> Preheat your oven to 350F (180C).</li><li>Prepare two 8" round baking pans by lightly greasing them, and then cutting a circle of parchment paper to fit into the bottom.</li><li>In a large bowl whisk together all of the dry ingredients, then set aside.</li><li>In a medium bowl whisk together all of the wet ingredients.</li><li>Pour the wet ingredients into the dry ingredients and mix until just combined. Don't over mix.</li><li>Divide the batter into the prepared pans, then pop them in the oven.</li><li>Bake for about 40 minutes until a toothpick inserted into the center comes out clean. Let the cakes cool completely before frosting.</li><li><strong>To Make the Frosting:</strong> Use a mixer to blend all of the frosting ingredients except for the non dairy milk. Blend until whipped and creamy. If the frosting is a bit to stiff, add 1 to 2 tablespoons of non-dairy milk as needed until desired consistency is reached.</li><li><strong>To Assemble the Cake:</strong> Run a knife around the edges of the cake pans, and flip the pans over to remove the cakes. Remove the parchment paper and discard.</li><li>Set the first cake on your cake plate, and spread about half of the frosting on top. Place the second cake on top of the frosted cake, and spread the remaining frosting on top of that cake. Add swirl patterns with your spatula to make it pretty. Store the cake in the fridge or a cool place until you are ready to serve.</li></ol><div><br></div>]]></description>

         <title>Sweet Potatoe Pie!</title>

Sweet potatoes pie was orginated in the south of the U.S. African slaves created the original recipe.Abby Fisher an African slave wrote the first known recipe and published it in 1881. <br><br><strong>Mississippi Sweet Potato Pie</strong><br><br>What You'll Need <br><br>• 2 prepared 9-inch pie shells, unbaked   <br><br>• 2 cups mashed or pureed sweet potatoes*  <br><br>• 4 ounces butter, softened  <br><br>• 2 cups granulated sugar <br><br>• 1 (5-ounce) can of evaporated milk  <br><br>• 1 teaspoon vanilla extract <br><br>• 3 large eggs, beaten  <br><br>• 1 1/2 teaspoons cinnamon <br><br><strong>How to Make It </strong><br><br>Make the Pie Filling<br><br>1. In a large mixing bowl, combine the mashed sweet potatoes, butter, sugar and evaporated milk.<br><br>2. Stir until the mixture is well-blended                                                                                                                <br> 3. In another bowl whisk the vanilla, eggs, and cinnamon together until they are well-blended.<br><br>4. Add the egg mixture to the sweet potato mixture and blend thoroughly.<br><br><strong>Assemble the Pie<br></strong><br>1. Pour the sweet potato filling into the prepared chilled pie shells.<br><br>2. Bake for about 1 hour in an oven preheated to 350 F or until the filling is firm and a knife inserted in the center comes out clean.<br><br>*Place 2 medium sweet potatoes in a large saucepan and cover with water. Place the pan over high heat and bring to a boil. Reduce the heat to medium-low, cover the pan, and cook until tender, about 10 to 15 minutes. Mash the sweet potatoes or puree with an immersion blender. Mix well. &nbsp;</li><li>Spread half of the mixture evenly over the meatloaf halfway through baking. My father is El Salvadoran and this meal is a traditional comfort meal commonly served in many Latino homes. Unfortunately, I don’t know how to make many traditional Salvadoran meals but, my father taught me how to cook this, and for that reason it is my favorite meal to make and eat.<br><br><strong>Salvadorian Beef Soup</strong><br><br>Ingredients: <br>•1 Beef Roast With fat</div><div>•2lbs Pork</div><div>•1 Large Onion</div><div>•3 Medium Carrots</div><div>•1 Small Yucca</div><div>•4 Ears Corn</div><div>•3 Medium Tomatoes</div><div>•3 Medium Zucchini</div><div>•1 pack of already made tortillas<br>•1 handful Cilantro</div><div>•2 Garlic Cloves (or 2 tbl. minced)</div><div>•3 Beef Maggi Cubes (or beef bullion)</div><div>•3 tbl. Salt </div><div>•2 tbl. Pepper</div><div>•2 tbl. Adobo season </div><div>•1 tbl. Garlic power</div><div>•6 Cups Water  </div><div>•3 tbl. lime juice<br><br>Directions:<br>1.In a large pot add 6 cups of water on high heat.</div><div>2.Chop meats in about 2 inch chucks. Clean meats in lime juice then rinse with cold water. Season the meats with all dry spices (adbo, garlic power, salt and pepper). Then set bowl aside. </div><div>3.Peel Vegetables such as yucca, onion, and garlic and husk corn.</div><div>4.Rinse all vegetables with water. </div><div>5.Chop all vegetables in 1-3 inch cubes. </div><div>6.Chop garlic and cilantro finely.</div><div>7.Add yucca, carrots and corn in the pot of boiling water first. (Take longer to cook through)</div><div>8.Add cilantro, garlic, salt and pepper in pot.</div><div>9.Cover pot let cook for about 20 min.</div><div>10.Add seasoned meats in pot. Cover pot.          <description><![CDATA[<div>My recipe is a West African dish called Potato Leaves or greens. It is consumed as vegetables in many African countries like Liberia, Sierra Leone and Mali. I choose this recipe because it is my favorite meal when I was in Sierra Leone. I haven’t tried to cook it yet because its ingredients are costly and I don’t want to take the risk of throwing it away if it doesn’t taste good.<br><br></div><div><strong>The good</strong>: This food is low in Saturated Fat, High Fiber and very low in Cholesterol. It is also a good source of Vitamin E (Alpha Tocopherol), Niacin and Phosphorus, and a very good source of Dietary Fiber, Vitamin A, Vitamin K, Thiamin, Riboflavin, Vitamin B6, Folate, Magnesium, Potassium and Manganese.<br><br><strong>The bad</strong>: This food is very high in Sodium, and a large portion of the calories in this food come from sugars.Therefore use sodium in moderation.
