This program provides me with the ideal opportunity to combine my passion for food with practical skills that will benefit my future career.

In my free time, I enjoy trying new recipes, learning about different cuisines, and spending time with friends and family.

I began my studies in Nutrition and Food Service Management (NFSM) due to my longstanding interest in the effects of food on individuals' health and well-being. I take pleasure in acquiring knowledge about food safety, meal planning, and the role of nutrition in supporting recovery and enhancing quality of life, particularly within healthcare environments. As I accumulated experience in food service and subsequently in patient care as a Ward Aide, I began to perceive another dimension of healthcare. Assisting patients and participating in their daily care made me appreciate the significance of direct patient interaction. This experience ignited a new interest in potentially pursuing a career as a midwife in the future. Currently, I am dedicated to establishing a solid foundation in nutrition and food service through my academic program and practical experience. In the future, I intend to determine whether to continue along the nutrition pathway—aiming for a leadership position in food and nutrition services—or to shift my focus towards becoming a midwife. Regardless of the path I choose, my objective is to merge my compassion for patient care with my developing skills to create a meaningful impact in the lives of others.

Fresh produce is kept in clean containers and arranged to avoid cross-contamination. Raw items are always placed below ready-to-eat items, and all foods are properly covered and labelled. Temperature is monitored to ensure it stays at 4°C or below, which is critical for preventing bacterial growth in RTE foods.

Preparation Area
The prep area is where ingredients are washed, cut, portioned, and prepared before cooking. This workspace is kept clean, sanitized, and organized to prevent cross-contamination. Staff use colour-coded cutting boards, clean utensils, and separate stations for different food types (e.g., produce vs. allergens). A sanitizer bucket and cloth are kept nearby to maintain surface cleanliness, and handwashing sinks are used regularly before and after handling food. Proper prep practices ensure that ingredients are safe and ready for cooking.

Cooking Area
The cooking area includes equipment such as ovens, stovetops, steamers, and other heating appliances. Food is cooked to the required internal temperatures to destroy harmful bacteria—for example, 74°C for reheated foods and many hot entrées. Staff check internal temperatures using a calibrated probe thermometer, and food is cooked in covered pans to maintain moisture and quality. Timers, clear procedures, and organized equipment help ensure consistent and safe cooking for patients and staff.

Reheating Area
This section is used to safely reheat previously cooked foods to the correct temperature. Foods must be reheated to at least 74°C within 2 hours before being served or placed in hot holding. Equipment such as microwaves, ovens, or steamers may be used depending on the item. Staff always check the temperature with a probe thermometer to confirm it reaches the safe reheating temperature. Proper reheating prevents bacterial growth and ensures the food is hot, safe, and ready for serving.
