I believe the meaning behind it is that sometimes people accomplish their dreams but most times they fail or "die". In the poem "Harlem" by Langston Hughes, he asks what happens to a dream deferred meaning delayed or postponed. So what he means is that most dreams that are "put on hold/pause" are likely forgotten or harder to achieve than they were before, therefore "drying up like a raisin in the sun".

I think it's talking about how a growing dream can be easily crushed and forgotten as quick as it grows, which in this context I believe it's some sort of strength that the person who has the dream has to use to let go of it which like a raisin slowly grows dry and gray, like someone who's emotions and hope in a dream is being lost, and if the dream comes back it won't be back the same way.

I believe when this line comes to mind it represents the drifting from your belief and the person that you're losing over time. The dream of becoming the person who everyone inspires to be but losing the motivation and flavor in the sun. Time and the sun take over your mind the conflict of who you are and want to be.
