         <title>Enchiladas Recipe </title>

         <description><![CDATA[<div>1. Let's start with the sauce: Toast the peppers on a comal, pressing them with a spatula, but making sure not to burn them. (This step takes only a few seconds on each side). <br><br>2. Once the peppers are roasted, place them in a saucepan with water and cook over low heat for 15 minutes, or until they are soft. <br><br>3. Remove the pot from the heat and let the peppers cool for 10-15 minutes. <br><br>4. After the peppers have cooled, place them in the blender. Add ½ cup of water and blend until you get a smooth sauce <br><br>5. To cook the enchiladas you need to cook the breast in low-salt water until cooked but juicy. Let cool and then shred to get threads of meat. <br><br>6. To assemble the enchilada, heat a pan with a little oil and pass the tortillas on both sides. Fill each tortilla with a little shredded chicken, roll up and place on a tray.  <br><br>7. At last, take it out once it is toasted, you serve the green sauce on top and you have your delicious enchiladas. <br><br><strong><em>Ingredients</em></strong> <br>- Chicken breast<br>- Vegetable oil (If you don't have you can use any oil you have) <br>- Peppers<br>- Corn tortillas</div>]]></description>

         <title>shrimp aguachile</title>

         <description><![CDATA[<div>1-. Peel, devein the shrimp and it is optional to open them and remove the guts after that soak them so that they are clean and put them in a bowl and cover them to let them rest.<br><br>2-. Use a knife to split the lemons, approximately 15 to 20 lemons are used, Squeeze the lemons in a dish and set them aside to continue with the rest.<br><br>3-. Cut the chilies in half, the chilies depend on how much you want it to chop and the amount of those chilies, for now we will put 2 and at the end you will try it if you want it more spicy or so; strip them and grind them in the blender along with the ¼ cup of water.<br><br>4-. Mix the shrimp, lemon juice, chili juice, add salt and let them rest in a container for thirty to sixty minutes in the refrigerator.<br><br>5-. Once the shrimp are cooked, integrate the cucumber and onion, it depends on what more vegetables you would add to complement its flavor, in the end it is already to taste, in some types of aguachile it is recommended to use mango or other fruits for its flavor .<br><br><strong>Ingredients</strong><br>2 pounds (1 kilo) of shrimp, peeled and deveined<br>¼ of red onion divided into half moons (in half and then cut in half)<br>Juice 15 to 20 lemons<br>1 cucumber sliced or diced<br>Salt to taste<br>2 to 4 jalapeño or serrano peppers (the serrano pepper is more spicy) deveined and seedless.<br>¼ cup of water<br>Tortilla toast or crackers</div>]]></description>

         <title>Recipe Pannenkoeken</title>

         <description><![CDATA[<div>Ingredients: <br>- 300 grams of wheat flour<br>- 2 eggs<br>- 500 milliliters of milk (cow)<br>- 1 teaspoon of salt<br>- some butter to bake<br>-  thin slices of bacon (optional)<br>- (powdered) sugar<br><br>Instructions:<br>1. Add the wheat flour, salt, eggs and half of the milk into a large bowl. Mix this until a smooth batter is formed.<br>2. Add the rest of the milk into the bowl and stir again. <br>3. Get a baking pan ( search for "koekenpan"on the internet) and put some butter in it. Make sure the butter is fully melted. (Medium-high heat.)<br>(4. when using the bacon, put the bacon in the pan and bake it for a few minutes on both sides so it becomes a bit crispy)<br>5. Pour a bit of the pannenkoeken batter into the baking pan and make sure theres a thin layer of the batter everywhere. It is very important to just pour in a very thin layer, otherwise the pannekoek will take to long to get baked and be raw. <br>6. Bake the pannekoek for a few minutes on both sides. (You can flip the pancake when there form small bubbles on the top.)<br>7. Take the pannenkoek of the stove and sprinkle some powdered sugar on top of it. Enjoy!<br><br><br></div>]]></description>

- 6 cups of chicken broth
- 1 chicken breast, cooked and shredded
- 3 tablespoons vegetable oil
- 1/2 cups onion, finely chopped
- 1 tablespoon garlic, finely minced
- 1 1/2 cups of tomato, in small cubes
- 1/4 cups pork rind, chopped
- 3 guajillo chili peppers, hydrated in hot water
- 1 ancho chili, hydrated in hot water
- 1 1/2 cups carrot, medium cubed
1 cup pumpkin, medium cubed
- 1 cup chickpea, cooked
- to taste of salt
- to taste of pepper
enough of Oaxaca cheese
 - to decorate
enough of avocado, in small cubes
- to decorate
enough of lemon
- to accompany
enough of pork rinds, chopped, to decorate
enough of coriander
- to decorate</pre><div><br></div><pre>Preparation
1.In a pot add the oil with the onion, garlic, tomato, pork rinds and fry for 3 min.

2.Blend with the consommé, the guajillo chili, the ancho chili and return to the pot. Reservation.
Add the carrot, with the chicken, the chickpea and boil for 5 minutes.

3.Add the pumpkin and boil for 3 min and season with salt and pepper.

4.Serve hot in a soup bowl and decorate with Oaxaca cheese, avocado and pork rinds. Accompany with lemon and a rich horchata water.</pre><div><br></div>]]></description>
