         <title>Cooking with Acids</title>

         <description><![CDATA[<div>Acids soften foods that have lots of proteins. Lime juice is an acid that breaks down the protein in fish. The lime juice's effect on the fish proteins gives the dish an appealing mouth texture and an opaque appearance that resembles<br>cooking with heat. Tough cuts of meat often are soaked in marinades made with vinegar, lemon juice, tomato juice or other types of acids to soften them<br>and add flavor. Marinades don't enter deeply into meat so in order for the spices to enter, acidic foods are added to open up the outer protein cells.</div>]]></description>

         <description><![CDATA[<div><strong><em>A big part of learning a second language is learning about the culture of that language. This week we will take a look at a famous literary character from British culture.</em></strong><br>Who is Sherlock Holmes?<br>Sherlock Holmes is a character from books written by Sir Arthur Conan Doyle.<br>Holmes became an icon of British culture and modern detective stories. Doyle introduced Holmes in 1887 in the short story “A Study in Scarlet” and went on to write at least 50 more stories featuring the detective, as well as The Hound of<br>the Baskervilles (1902) and several other novels. Doyle based his character on the personality of his former teacher in medical school, Dr. Joseph Bell of Edinburgh.<br>Sherlock Holmes is a detective who tries to find out who committed the crimes.<br>There is a monument in London dedicated to him. He has a sharp mind and solves<br>even the most difficult and strange mysteries. He works with his friend Dr Watson, a retired army officer. Sherlock Holmes is often dressed in a coat and cap, and carrying<br>a pipe and a magnifying glass. He lives at 221B Baker Street in London.          <title>What Is the Hubble Space Telescope?</title>

         <description><![CDATA[<div><br>The Hubble Space Telescope is a large telescope in space. NASA launched Hubble in 1990. Hubble is as long as a large school bus. It weighs as much as two adult elephants. Hubble travels around Earth at about 5 miles per second.<br>That is as fast as driving a car from the East Coast of the United States to the West Coast in 10 minutes. The distance between the two coasts is 4,800 km, which is similar to driving from Amman to Aqaba and back 14 times!<br>Hubble faces toward space. It takes pictures of planets, stars and galaxies. Hubble has seen stars being born.<br>Hubble has seen stars die. It has seen galaxies that are trillions of miles away. Hubble also has seen comet pieces crash into the gases above Jupiter.<br>Scientists have learned a lot about space from Hubble pictures. The pictures are beautiful to look at too.</div>]]></description>

         <description><![CDATA[<div>The mixture of gases that surround a planet is called its atmosphere. Earth's atmosphere changes and blocks some of the light that comes from space. Hubble flies around, or orbits, high above Earth and its atmosphere.<br>So, Hubble can see space better than telescopes on Earth can. Hubble is not the kind of telescope that you look through with your eye. Hubble uses a digital camera. It takes pictures like a cell phone. Then Hubble uses radio waves to send the pictures through the air back to Earth.</div>]]></description>

An empire is a group of kingdoms that work together. The Nubians lasted for thousands of years. They developed their own culture and style of arts. Their jewellerymakers<br>especially showed great skill.<br>James Blake Wiener spoke to Denise Doxey. Wiener works for Ancient History Encyclopedia. Doxey is an art expert at a museum in Boston, U.S.A. The two of them talked about Nubian jewellery.<br><mark>James Blake Wiener:</mark> What is it about Nubian jewellery that stands out?<br><strong><em>Denise Doxey:</em></strong> Its jewellery shows how <strong><em>worldly</em></strong> Nubia was. Many cultures mixed there. Ideas came from central Africa. Egypt was Nubia's neighbour. Traders came from Greece, Rome and Asia. New ways of doing things were always moving back and forth.<br>Nubian artists were <strong><em>ahead of their time</em></strong>. They were trying out new ideas. Some experimented with enamel. Enamel is a coating for jewellery and other wares.<br>Nubian jewellery-makers also liked trying new materials. Some stones came from distant lands. One queen's grave was filled with unusual gems and fossils.</div>]]></description>

They tried new styles. Blue-glazed quartz beads are one example. These were made from quartz crystals.<br>Quartz is a type of clear stone. They were shaped into balls. A hole was poked through them.          <description><![CDATA[<div>Deep within the world’s seas and oceans is an area called the<br>abyssal zone. It lies more than 6,000 feet (1,800 meters) below<br>the surface of the water. It is totally dark there, and the water<br>is almost motionless. Yet even in these environments various<br>forms of life survives. These range from tiny microorganisms to<br>more complex animals such as fish and crustaceans.<br>For a long time scientists believed that there could be no plants in the dark bottom of the ocean because plants need light. It was also thought that without plant life there could be no animal life.
