One of there survival techniques is to act dead when a predator is trying  to step on them. 

They have powerful deterrent. 

Their leg joints give out a dose of strong bad-tasting goo. So, when a predator eats them, they'll go yuck! *Not literally*

Those who eat these foul insects, will remember the bad taste and learn not to eat them .
