This shows that she knows what she is doing. She knows that she has power over him. This can suggest that there is still more that what meets the eye to this castle. In order to seduce Gawain, the lady encourages him in a way. In the text she says "And you are the noblest knight known in your time;" (line 1520), comparing him to Arthur, who is the greatest person in Gawain's eyes.
