• I think tanning. I know there are risks, but I love to lay out in the sun. Also, I’m kind of addicted to diet soda.

What is the most unusual thing you have ever eaten?

• On a high school trip to Ecuador, I tried Guinea Pig. We got to meet them alive the day before, so it was kind of weird to eat them for dinner the following day. It was salty.

What is the most daring thing you have ever done?

• I ran the Paris marathon earlier this year. I’ve never been a runner or an athlete, so it was a challenge. I started cramping at mile 20, but I somehow managed to finish.

  
  

If you could only eat one meal for the rest of your life, what would it be?

• I would eat sandwiches for every meal in the most general sense. If a sandwich is just food enclosed in some starch, I would eat tacos, hot-dogs, and dumplings.

How many languages do you speak?

• Besides English, I speak Spanish and French. I am Mexican, and I lived in France for 9 months. I am trying to learn Vietnamese, but it’s not going very well.

What was your first paid job?

• I worked as a crew member at an AMC theater. It was fun. I liked watching free movies.

What is your favorite childhood memory?

• In second grade, I saw that the other kids weren’t eating the crust of their sandwiches, so I decided to join in. The next day, my mom was making me a PB&J sandwich and I asked her to cut off the crust, she asked “ why? If it’s just bread that’s a little more baked” I insisted, and she gave in. My mom then brought me my sandwich, and I scarfed it down with a side of milk. She stood next to me the whole time with a smirk on her face, I asked “what’s wrong?”. That’s when she told me that she made me a sandwich with the bottom and top pieces of the loaf which is practically all crust. I was shocked, my mom tricked me! After that day I never asked to her to remove the crust ever again.

What is your favorite place to eat on campus?

• Surprisingly Forbes Cafe. Boba and soup? Oh boy!

What led you to work in this field?

• Weirdly enough I always had my foot in higher education. Did a minor during my undergrad here in education for teaching to become a professor. Taught at my old high school and at University of Washington briefly. But it was mostly when my graduate school closed due to financial exigency and possible embezzlement that I wanted to take a more proactive role in helping students with making smart choices for their future educations.

What was the greatest bit of advice a mentor has given you?

• My high school science teacher, Mr. Griffith, who is still one of the most well respected, intelligent, patient gentlemen and one of the best teachers I ever had once said “You should never feel that you must apologize for something that you’ve done your best at. And if your best is not accepted, then chances are the issues lie elsewhere and not with you”.  Those words still echo within me today!

What food have you tried that was the furthest from your comfort zone?

• Frog legs (Ewww)! I’d heard that frog legs were really good and tasted like chicken. I guess my taste buds are a bit off because to me, they taste nothing like chicken. In fact, it was a horrible, fishy taste that I did not care for at all! Mind you, I like chicken and fish, but frog legs must be an acquired taste. Truly not my comfort zone!

What was the first full time job you ever had?

• Exercise instructor at Elaine Powers Fitness Salon in Sacramento CA. We catered to fitness for women! Got to meet a lot of interesting people as well as practiced fitness at the same time!

What is your favorite sport to watch?

• Frankly, I'm not big on sports, but I do like watching them in person. However, if I had to say "favorite", it would be Figure Skating! I really enjoy watching the skaters glide so gracefully and effortlessly on the ice with the amazing dances and beautiful performances that they do!
