         <title>Noura loves sharing with new people</title>

         <description><![CDATA[<div>My name is Nuora, major in Nutrition, and my participation was a part of (NUTR 3325) class. My presence on this day added to me the love of sharing with new people in an experience that is not new to me, but in a new place with people whose hearts are full of people's love and helping people, I have worked in cooking, especially hummus and chickpea salad sandwiches. Hummus is a food I love to eat, especially with falafel, and I have never done it before. The experience of his work made it easy and I will do whatever I wanted to eat.&nbsp;<br>&nbsp; I, as a Muslim, do such an act on every occasion related to the ahl albeit( the family of Prophet Mohammed), peace be upon them (their deaths and their births), and their deaths most often we cook and distribute to neighbors and relatives or sometimes we open our homes and people come to take the blessing (food).&nbsp; My presence on that day made me feel comfortable because I did not go to my country for a while, nor was I on these occasions, an experience that I always want to do if I had the opportunity.&nbsp;</div><div>&nbsp;this is a link about how ours look like in my country.  <a href="https://youtu.be/59PJUCBrHn4">https://youtu.be/59PJUCBrHn4</a>&nbsp;</div>]]></description>

         <description><![CDATA[<div>Being part of the UIW Peace Day event was an amazing experience. Before this event, I didn't have much knowledge of what Peace Day was. I love how we were able to bring awareness to other students and explain to them how this holiday has made an impact throughout the world. Peace day is celebrated every year on September 21<sup>st</sup>. The United Nations General Assembly started the holiday in 1981. It was started to promote public awareness on issues related to peace and have a period of non-violence and cease-fire. Countries throughout the world participate by hosting events, creating organizations, and carrying out lifesaving activities in areas of need. Many students weren’t aware of this holiday or what it meant. They appreciated that we were able to express its importance by bringing everyone together with food. We were able to bring students healthy lunches and at the same practice sustainable measures. We were able to put those measures in place by encouraging more plant-based and organic meals. There were many options for people that may have food restrictions or allergens. All of the food we made was fresh and homemade, so none of the food we gave out was unhealthy or full of chemicals and preservatives. My partner and I were in charge of making the apple cinnamon oatmeal cookies and apple slices coated in sugar and cinnamon. I was happy that we could provide delicious dessert options that were also nutritious. It was very rewarding to hear and see that people loved our cookies and the rest of the food. Many of the students came back for seconds because of how good the food was. I was relieved that we had made so much food and were able to provide more food to the students that came back for seconds. Many of the students that are on campus live in dorms and can’t make food that is healthy and wholesome for several reasons. This may include not having the financial needs, no refrigerator or stove to cook with, or not having enough time to cook. I am sure most of the students on campus received a meal, because all of the food that was made was handed out. I’m glad that I was able to volunteer because I met a lot of people throughout the event, which was great since I am a transfer student. I really enjoyed this experience and will definitely volunteer again if the opportunity presents itself. This was a great way to gain volunteer hours since it doesn’t feel like you are doing work. I hope that the nutrition and dietetics program at school stays involve with these types of projects or even organize them. &nbsp;</div>]]></description>

         <title>Ben&#39;s Peace Day Reflection</title>

         <description><![CDATA[<div>My name is Ben Garza and I am a nutrition graduate student in Food Systems Management (NUTR 3325). For the Peace Day catering event, I worked with my team to develop and prepare the turkey pesto wrap and apple cinnamon oatmeal cookies. We refined the recipes, scaled them to the appropriate quantity, and created an ingredient shopping list. On the day of the event, I prepared the spinach parmesan pesto and began the process of making 100+ cookies.<br><br>Peace Day taught me many things. First, it highlighted the importance of planning and efficient cooking practices in large-scale kitchen work. For example, we had to split up and delegate tasks according to our production schedule to ensure everything was prepared by lunch-time. This practice ensured efficiency and productivity were maintained throughout the morning. Further, on the morning of the event, we realized our watermelon was missing. Dr. Frazier and I improvised and created another infusion beverage with the extra available ingredients. Thus, even with extensive planning and preparation, we must be ready to solve unexpected problems. Finally, the lunch event provided an opportunity to fulfill sustainability guidelines. Through our lunch, we used plant-forward entrees, in-season fruits and vegetables, and minimized waste (by repurposing leftovers). These sustainability goals seem much more attainable after seeing them in practice. Altogether, Peace Day provided a means to practice menu planning, food preparation, and real-world application of sustainability guidelines.</div>]]></description>

         <description><![CDATA[<div>My name is Shania Salinas, my major is in Nutrition and I participated for my class Nutrition 3325 with Dr. Frazier. What I learned from this preparation of Pead Day was how to make food for a large amount of people. I learned how to scale recipes and production time, as well as ways to move towards being more sustainable. We created a variety of foods that included our goal of going more plant forward. This included sandwiches and wraps with no meat, carrots and hummus as a snack, cookies, and apple slices. Another thing I took away from this even was ways to use our left overs to produce more meals, which also goes with our goal of sustainability. At the end of the day, before it was time to clean up we had a lot of greens, lettuce and spinach leftover so we made salads of what we had leftover to provide more meals.  </div>]]></description>

I was one of the students who had the chance to make one of the meals. I enjoyed making a nutritional meal for the students at the University, I was not able to attend the event but being part of making the meals was very nurturing. All the steps were interesting, from deciding with my teammates what we going to make, from creating the recipe, looking the ingredients and also measuring them, using the skill we been through to something like this had my eyes open on what the future will look like if I decide to use my minor of nutrition in the future.</div>]]></description>

Peace Day was a great opportunity to combine learning with experience and I’m glad I had the chance to be a part of it this year. In class I learned about menu planning, where my group had a part in the creation of the vegan wrap and cinnamon apple slices. In planning we also created a production schedule and increased our recipe’s to match feeding a large amount of students. On the day of, I had the chance to cook, work as a team with other students, and hand out meals. Before Peace Day, I had not had a part in planning an event to feed a large crowd. I had a lot of fun and I feel like I gained valuable experience that I will be able to use in my future classes and career.&nbsp;</div>]]></description>

         <description><![CDATA[<div>My name is Tamara Al Gailani. I am pursuing a master’s degree in Nutrition. On October 27th, I participated in Worlds Peace Day at UIW that was part of my Food systems Management (NUTR 3325) class. I’m pleased to share that my experience was delightful and educational. My classmates and I had the opportunity to create a Pesto Turkey wrap and Apple cinnamon oatmeal cookies. I learned how to properly scale a recipe, calculate the ingredients we need to prepare for the individuals, and re-use leftover foods. Two of my classmates and I prepared the tables, organized the food, placed the cinnamon and cold water in the dispensers, handed the food out, and educated Worlds Peace Day while students and the staff members picked their lunch. My most enjoyable moment on that day was seeing how grateful the students and the staff members were while we suggested meals to choose from based on what they were craving. I was so happy helping on this day.</div>]]></description>

         <description><![CDATA[<div>Hello, my name is Juliette. I'm a Dietetics major in the NUTR 3325 class. I had an incredible time participating&nbsp;in the Peace Day event at The University of the Incarnate Word. I volunteered to help prepare the hummus that was served in the event. The hummus came out delicious and paired well with the food options served. I also volunteered to help prepare, roll, and package all of the turkey and pesto wraps. What I learned from that experience is the importance team work plays in the preparation of the event. We had multiple students helping prepare the food, setting up for the event, and cleaning up afterwards. I heard many positive comments from the students who picked up food during the event. Many welcomed the program for allowing the meals to be free of charge. The work all the nutrition students put in resulted in a successful event and was well worth it. I am already looking forward to the next event! </div>]]></description>

         <description><![CDATA[<div>I learned many things while planning, preparing, advertising, and serving for this day. The weeks before the actual event, we planned what the event would entail, the menu details, and how we would advertise the event. While preparing, I learned that when making a menu for many different people, it is crucial to incorporate all types of food, because some people have dietary restrictions, allergies, and unique preferences. I also learned through food preparation that it takes an entire team to prepare a large event, and it is important that everyone has a task and we all work together to get things done efficiently and productively. I really enjoyed making the hummus for the peace day event, because it made me realize that a bunch of little things add up to one big thing. What I mean by this is that one person cannot do everything but if everyone does something then there is a huge impact. I really felt it was important to give back and volunteer for this event so that it could be an amazing event. I advertised this event to all of residence life and reminded several resident assistants on campus to tell their residents to come by, and I was really happy to see some of my own residents who are vegetarian come by for a lunch that they could eat.<br><br>&nbsp;I really enjoyed serving food at the event on October 27th, because I got to connect with new people and advocate for sustainability and healthy options. It made my day knowing that we could help people by giving them a healthy and free lunch on campus. I know that everyone has their own life and struggles going on behind the scenes, and I was glad to impact a few people even if it was just a little bit by offering healthier options for all types of people and diets.&nbsp;</div>]]></description>

         <description><![CDATA[<div>My name is Bevin and I am a nursing major. I am a student with the social justice leadership class. My event that I was involved with was "This is Not a War Story." One thing I learned was about what it is like being a veteran and their struggles with coming back to the United States after what they experienced. My grandfather enlisted in the marines at the age of 17 during the Vietnam War and he never disclosed what he experienced and what it is like living in the US after the war. After the film ended we had  a conversation with the filmmaker and other veterans. I learned a lot about their internal struggles and coping with being told "thank you for their service" when they don't want to be thanked for what they did. I am grateful for what I learned from my event on Peace Day and I have been teaching my friends and family about what I learned as well. </div>]]></description>

By helping the Uganda Kosovo women who are working on achieving leadership, we can spread women equality and help promote our sustainability goals. I learned a lot about myself as I helped multiple events during the month of October, peace month. I helped raise publicity for the “All deserve to be sheltered” and “Compassion connection” events through posters. The main event I was passionate about was the free exchange event. It is a form of mutual-aid within our community where can can come together to exchange items we no longer want at no cost. In addition, it is a sustainable practice as it prevents unwanted possessions from ending up in landfills. I learned that we can spread more awareness about how we are capable of relying on each other rather than companies.          <description><![CDATA[<div>On Peace Day a panel including UIW Sociology student Victoria Valazquez explained how the death penalty is not lessening violence in Texas, but furthering cycles of violence. A few months before San Antonio citizens working with the Texas Coalition to Abolish the Death Penalty demonstrated.  Sr. Martha Ann Kirk, on the right, remembers that after Incarnate Word Sister Patricia had been murdered, the Sisters got to know the mother and sister of the murderer who seemed to be delusional.  He needed to be kept away from society, but killing him would only further pain and violence. </div>]]></description>

Unfortunately, I was sick with strep throat the day I was supposed to work with RELS 3380. However, I thought I should at least try to do something for this cause, so on the night of November 6th I went to pick up a large pizza from pizza hut, and on the drive home I saw a homeless man on the Austin HWY. I pulled over in an empty parking lot then gave him the food and attempted to give him money but he refused and even went so far as to pay for the pizza with a little broken brass pipe that could fit in the palm of my hand. I didn't do this because I missed my Peace Day I did it because I was tired of living selfishly and I wanted to do something for someone else for a change.</div>]]></description>

         <description><![CDATA[<div>The United Nations Sustainable Development Goals are ways that we the global family are compassionately taking care of each other and recognizing how creation takes care of us the humans. Dr. Ben Miele, coordinator of the new Sustainability Concentration joins in the conversation. San Antonio has been growing as a “City of Compassion,” taking a systems approach in light of our City Council resolution. Local efforts began on the UIW campus in a class <a href="https://sites.google.com/view/sa-compassionate-training-2/stories">service learning project</a> https://sites.google.com/view/sa-compassionate-training-2/stories &nbsp; in 2009. Students have power and now compassion is especially growing in the "Compassion Student Peer Organization." an organization founded by UIW graduate students and mentored by Dr. Joan Labay Marquez. We heard about roots and realities from Dr. Monica Cruz, Special Research Associate at the “<a href="https://idser.utsa.edu/">Institute for Demographic and Socioeconomic Research</a>” (IDSER) at UTSA. We heard from Rev. Wyndee E. Holbrook, director, Interfaith San Antonio Alliance (ISAA) how people are uniting in service.          <description><![CDATA[<div>Margarita Cabrera, internationally acclaimed community artist, described her ongoing project, "The Space in Between" in which people listen to immigrants tell their stories. https://www.artnews.com/art-news/artists/searching-margarita-cabreras-collaborative-art-thinks-beyond-borders-10456/&nbsp; Dr. Lopita Nath, acclaimed for teaching about refugees and building friendships with them, and Sr. Adriana Calzada, Ph.D. student who is working with the IW Sisters Hilton Foundation Grant to help immigrants and refugees, joined in conversation. Cabrera is inviting the UIW community to join the community art project. Uniforms of border patrol agents are cut and recycled into art pieces telling the stories of immigrants. Ann Helmke, now leading the City of San Antonio Faith Based office,&nbsp; Dr. Sandra Guzman Foster of the UIW Education Dept, Sr. Martha Ann Kirk of the UIW Religious Studies Dept., and Dr. Andy Hill of the St. Phillip's College Philosophy Dept. shared at the 2021 <a href="https://parliamentofreligions.org/parliament/2021-virtual">Parliament of World Religions</a>. This has been the largest multi-religious gathering in the world and was held virtually this year. Each of us furthers compassion in our daily actions. Seeing UIW students and faculty come together for Peace Day showed me how the community is passionate about making an impact. In preparation for this day I learned a lot about event planning and team work along with how fun it can be.          <description><![CDATA[<div>My name is Mia Munoz and I am also a nursing major. I am a student with the Social Justice Leadership class. In regard to Bevin's event, "This is Not a War Story," I would like to discuss my own personal stories about veterans and their struggles. My dad was in the army for six years before returning home. Thankfully, there was no war during his time so he did not have to endure any sort of PTSD. However, my great-grandfather was enlisted in World War II and my grandmother said that after the war, he was never the same. He endured severe injuries and saw many of his friends die. Eventually, he died of old age. It would have been really awesome to see this film with my grandmother!</div>]]></description>
