         <description><![CDATA[<p>Hi everyone, my name is Mavis Kwarteng. This Portfolio documents the education and skills I have gained during my time of study as an Early Childhood Education student at Fanshawe College. I look forward to meeting you and getting to know you more.</p><p><br></p><p><strong>Personal Life</strong></p><p><br></p><p>I am a mother of five, while working full time and studying the Early Childhood Education program part-time at Fanshawe College. I have a strong passion and enjoyment working with children, especially preschool and school-age children. During my free time, I would take my children out for a nature walk and go on a bike ride to connect and build a strong relationship with my children.</p><p><br></p><p><strong>Why did I choose this program? </strong></p><p><br></p><p>The reasons I chose this program because I love being around young children and working with them. I found joy in helping them learn, grow, and explore the world around them. By connecting and building relationships with my children during the early stage to adolescence, it helps me to build my confidence and a strong passion for the program to support and help children.</p><p><br></p><p><strong>Placements &amp; Volunteers' Experiences</strong></p><p><br></p><p>During my study at Fanshawe College, I completed my first placement experience at Kids and Company Child Care Centre. This was an amazing experience, where I got to support and build relationships with the parents, children, and mentor. During my free time, I volunteered at the Young and Youth Ministry at Life of Faith Ministries and after after-school care program. I believe that the experiences of placement and volunteering have helped me learn how to plan educational activities, build relationships with children and their families, and work collaboratively with other educators and caregivers. I look forward to my second and final placement, where I will continue to strengthen and gain skills related to child development and my profession as an educator.</p><p><br></p><p>In this portfolio, you will find my reflections and my work from the program. The purpose was to design nutritious, balanced meals that follow the Canadian Food Guide. For each day, I planned a morning snack, lunch, and afternoon snack, making sure to include the right balance of protein, whole grains, fruits/vegetables, and milk or water for lunch. Snacks also included a fair balance of whole grains, fruits/vegetables, and a healthy drink option. I also planned vegetarian alternatives for children who cannot eat meat or fish, ensuring that all children’s dietary needs were met.</p><p><br/></p><p><strong>2. Why is this artifact included under this area or outcome?</strong><br>This artifact is included because it demonstrates my ability to support children’s health and well-being through careful menu planning. It shows that I can apply nutritional guidelines to create meals that encourage healthy eating habits. By planning meals that meet the Canadian Food Guide standards and provide variety, I am supporting children’s growth, energy needs, and overall development. It also reflects my understanding of inclusive planning by providing options for children with dietary restrictions.</p><p><br/></p><p><strong>3. Why is the artifact an example of my best work in this area?</strong><br>This is an example of my best work because I approached the assignment thoughtfully and with attention to detail. I made sure the meals were not only balanced and nutritious but also appealing and realistic for children. I also ensured that the vegetarian alternatives were equally nutritious and satisfying, showing that I can adapt plans to meet different needs while maintaining quality.</p><p><br/></p><p><strong>4. This artifact was intended to deepen my understanding of how children's development is impacted by healthy eating habits and how educators may foster positive mealtime experiences that promote lifetime healthy eating habits  </p><p><strong>2. Why is this artifact included under this area or outcome?</strong></p><p>This artifact is included here because it shows my knowledge of good nutrition that supports children's health and development, energy levels, and the ability to self-regulate throughout the day. Good and healthy eating supports children's physical development and emotional well-being. This assignment also highlights educators' responsibility to create a safe and supportive mealtime  environment that promotes healthy eating habits and children's well-being. </p><p>3. How do these artifacts demonstrate the specific competencies, skills, and knowledge I now possess?</strong></p><p> This artifact demonstrates my understanding of developmentally appropriate mealtime practices and nutrition. It reflects my ability to create a nurturing environment that promotes children's overall well-being, encourages healthy eating, and fosters positive interactions with food. It also highlights my awareness of the educator's role in enhancing self-regulation through calm and regular routines, modeling good behaviors, and nurturing children's independence during mealtime. As an Early Childhood Educator (ECE), I will use this knowledge to meet each child's physical, emotional, and developmental needs, promoting healthy habits and creating positive eating experiences.</p>]]></description>
