Attracting more customers as, depending on the venue, location and aim of the fair or market, there may be a vast amount of customers passing your stand each day.
It offers a chance to advertise any additional services the vendor offers e.g.  craft classes, tuition or courses run by the vendor 
build up a regular base of customers 
target areas slightly out of your normal reach -  reaching more customers by going out and about to fairs and markets.
If you have an online or mail order part of your company, then you can benefit from promoting this side of your business at such events,

Exhibitors should have liability insurance to cover them for damage or injury caused by their stall or products they are selling and remind exhibitors to bring proof of cover with them on the day,
