They did so beacuse they wanted to marry a member of the opposite sex to maintain an Orthodox way of life. According to Jewish law, marriage between men is forbidden and the film describes the process that those men and women went through in light of the men's choice to enter into such a marriage and without the women's knowledge. (And similarly for women who married men despite the attraction to women).
