         <description><![CDATA[<div>There are a couple of reasons that the Latke recipe changed from cheese to potatoes in this region. One is that Eastern European Jewish people would use a cooking fat called Schmaltz (cooked down chicken fat) instead of olive oil like in Italy, and it is against Jewish dietary restrictions to mix dairy with another animal product.          <description><![CDATA[<div>Before 1492, many Jewish people lived in Italy. Their version of a Latke was more like a deep-fried, cheese pancake made with ricotta cheese. It is referenced in texts that date back to the 13th century that describe the food eaten during Chanukah.<br>Chanukah celebrates the resilience of the Maccabees (a Jewish tribe) and tells the story of a candle that burned for eight days with a single can of oil.
