This is my go-to soup for Fall/Winter! + a baguette slice or bread bowl! I used to go to school about 5 feet from a Panera Bread location, so every time I felt a cold coming or just needed a warm pick-me-up, this was my #1 pick on their menu. I've been trying to make my own version at home, and it's delicious! I usually make a large batch and eat it over a particularly cold or rainy week. (The plus of making it at home is having the freedom to switch out the broccoli with any vegetable of choice! Cauliflower and mushrooms are may favorite additions with a side of a grilled cheese sandwich with caramelized onions! 👌)

Inspired by my partner's granny, pot roast has become a fall/winter staple in my house! I like to make them Mississippi style. This is what I do:

Season your roast and grill it for about 5 minutes on each side to get a good browning.

Remove roast from grill to place in InstaPot or CrockPot.

On top of the roast, add chopped onion, some pepperoncini and its "juice," gravy, a few bay leaves & of course, more seasonings.

Cover the pot and leave that baby alone for 3 hours on high!

After 3 hours, add in carrots and potatoes. (I like to do this step about halfway through so that the veggies aren't all mush.)

Cover the pot again and do another 3-5 hours on high. (In my experience, the longer, the more tender!)

ENJOY :)
