If it is an informal conversation, the email is also written in the same manner but if it is required to be a formal one, the email is written with the subject, the salutation and the body.

Emails are a more professional approach to a particular situation whereas texting becomes a very informal way to communicate to the second person.
Emails are written to officially inform the other person about something and also so that it leaves a documented proof of the conversation,

whereas

texting can also be used to communicate to another person and is also a more easier way to do the same but is not accepted in the professional world.

Example:
When working in a company, we will always be encouraged  to write mails to our peers and also the higher officials to report a problem or give a feedback rather than an informal text in order to maintain a more professional approach.
