Different types of tea, like green, white, black, pu-erh and oolong teas comes from the same plant. However, the way they process the tea makes the difference in the taste and smell of the tea.

After that the leaves are rolled and fermented. The fermentation process is important in that it produces the essential oils that give teas their distinctive flavors. 

While most teas leaves are made this way, herbal teas are made from seeds, berries, flowers or roots. Herbal teas can be created from a lot of different plants, like chamomile, peppermint, dandelions, hibiscus, barley, sage and rosemary.
