Jeff jumping when Lisa enters is also a sign of how immersed he was in viewing life through a camera. It was perhaps Jeff's way of feeling 'normal' in light of his broken leg and inability to work and gallivant around the world.
It also shows the audience just how addicted Jeff is to his work and to adventure, and the lengths he'll go to in order to have a sense of adventure and risk in his life (spying on his neighbours, giving them each a story) and to feel useful again (using a camera)

When Lisa talks about the handbag and the predictability of women to her, lights are on, and the atmosphere is brighter, implying certainty.
Lisa and Jeff, once done talking about Thorwald, and especially when Lisa shows Jeff her 'suitcase' are in dim, but brighter lighting. This implies certainty in their relationship, especially so, after Jeff sees the potential of Lisa in his desired lifestyle and her willingness to change for him.

The Handbag

Jeff's interest and confusion towards Thorwald's wife's handbag is a metaphor for his understanding of Lisa: he likes her, and he knows what's happening at face value the same as he would any other person, but he can't understand her any further than that. He has no ability to predict what she might do, or what she holds; her capabilities and emotions.
Lisa, however, with her 'feminine intuition' is able to draw out what the handbag and the jewellery means. This scene, really, is what solves the case in her mind, then the audience's, and then Jeff's, because we trust Lisa with her proper, more formal English, her clothes, the brighter lighting used around her, and the lengths she goes to for Jeff. Her analysis of a woman's relationship with her handbag is demonstrated by her and her overnight bag, in that it has everything she needs, and it appears a handbag and travelled with her to work and to Jeff.

The white, netted fascinator/veil that Lisa wears, is only taken off once lights are on and as the conversation about Thorwald winds down, as well as once she's made her point about the handbag. Instead of a wall between Lisa and the world, the veil is much like the block Jeff often has in his mind regarding Lisa - as he realises Lisa's intellect regarding the situation, that block comes down, just as the veil is removed.

Lisa's constant movement contrasts to Jeff's stationary position, challenging his belief that she is not made for adventure and cannot match his lifestyle. The camera pans around, following her as she turns on the lights, moving away the food, showing her mobility and symbolising her freedom of thought. The high camera angle looking up to her conveys her power and intelligence as she expresses her quick rebuttal to Jeff's theory using her "feminine intuition." Such is further evinced by Jeff giving an admiring smile up to her, in his newfound revelation of her wit and insight.
