         <description><![CDATA[<div><strong>OUR FAVOURITE RECIPES FOR MEALS AND SNACKS:  </strong><br>Rosmini College, Auckland, New Zealand<br>BREAKFAST | LUNCHES and SNACKS | DINNERS | DESERTS<br><strong>Breakfast</strong><br>PancakesPancakes were introduced 30,000 years ago in the stone age. Researchers found pancakes in the stomach of Otzi the Iceman. Humans remain dating back 5,300 years ago. In Rome and Greece pancakes were made of wheat flour, olive oil, honey and curdled milk.<br>1 cup Edmonds Self Raising Flour2 Tbsp Chelsea White Sugar½ tsp finely grated lemon zest (optional)1 cup Meadow Fresh Milk (or Soy/Rice milk)1 egg, lightly beaten30g Tararua Butter, melted (or margarine)<br>Sift the Edmonds Self Raising Flour and Chelsea White Sugar into a bowl. Make a well in the centre of the dry ingredients. Add the lemon zest, Meadow Fresh Milk, egg and melted Tararua Butter/margarine and whisk to combine. Heat a large non stick frying pan over medium low heat and grease lightly with Tararua Butter or oil.For each pancake, place 2 tablespoons of batter into the pan. Cook for 2 minutes or until bubbles form on the surface. Turn and cook for a further 1 to 2 minutes or until the pancakes are cooked through.<br>Luc sangster 8ECE<br><br> | <strong><em>Anzac Cookies</em></strong><em> (A traditional classic in NZ, it commemorates ANZAC; Australia New Zealand Army Corps, who fought during WW1 in Gallipoli)</em>1 cup rolled oats1 cup thread coconut1 cup flour1 cup sugar125 g butter2 Tbsp golden syrup1 tsp baking soda2 Tbsp boiling waterPreheat the oven to 180°C.Lightly grease a baking tray or line with baking paper.Combine the oats, coconut, flour, and sugar together in a large bowl.Melt the butter and golden syrup together. Dissolve the baking soda in the boiling water and add to the butter mixture. Pour the butter mixture into the dry ingredients and mix together.Roll teaspoons into balls and place on the tray, allowing room for them to spread. Bake for 12-15 minutes<strong><em>(Maximilian Wong 7SCB)<br><br></em></strong> | <strong><em>Shepherd's Pie</em></strong><em> (Also a traditional food in NZ, it is mostly served for dinner on a special occasion, or for guests)</em><br>1 tbsp sunflower oil1 large onion, chopped2-3 medium carrots chopped500g pack lamb mince2 tbsp tomato puréelarge splash Worcestershire sauce500ml beef stock900g potatoes, cut into chunks85g butter3 tbsp milk<br>Heat 1 tbsp sunflower oil in a medium saucepan, then soften 1 chopped onion and 2-3 chopped carrots for a few mins.<br>When soft, turn up the heat, crumble in 500g lamb mince and brown, tipping off any excess fat.<br>Add 2 tbsp tomato purée and a large splash of Worcestershire sauce, then fry for a few mins.<br>Pour over 500ml beef stock, bring to a simmer, then cover and cook for 40 mins, uncovering halfway.<br>Meanwhile, heat the oven to 180C/ fan 160C/ gas 4, then make the mash. Boil the 900g potato, cut into chunks, in salted water for 10-15 mins until tender. Drain, then mash with 85g butter and 3 tbsp milk.<br><br>Put the mince into an ovenproof dish, top with the mash and ruffle with a fork. The pie can now be chilled and frozen for up to a month.<br>Bake for 20-25 mins until the top is starting to colour and the mince is bubbling through at the edges. (To bake from frozen, cook at 160C/fan 140C/gas 3 for 1 hr-1 hr 20 mins until piping hot in the centre. Flash under the grill to brown, if you like.)<br>Leave to stand for 5 mins before serving.<strong><em>(Maximilian Wong 7SCB)</em></strong>  |<br> <strong><em>Lamington</em></strong><em> (Though it is Australia's famed dessert, it was actually invented in New Zealand and originally named a “Wellington”, but this is only what Auckland university says. Either way, lamingtons are ‘sweet as’ treats!)</em><br>125g butter, softened1 cup caster sugar1/2 teaspoon vanilla extract3 eggs1 3/4 cups self-raising flour, sifted1/2 cup milk2 cups desiccated coconut3 1/2 cups icing sugar mixture1/4 cup cocoa powder1 tablespoon butter, softened 1/2 cup boiling water<br>Preheat the oven to 180°C/160°C fan-forced. Grease a 3cm-deep, 20cm x 30cm (base) lamington pan. Line with baking paper, leaving a 2cm overhang on all sides. Using an electric mixer, beat butter, sugar and vanilla until light and fluffy. Add eggs, 1 at a time, beating well after each addition (mixture may curdle).<br>Sift half the flour over butter mixture. Stir to combine. Add half the milk. Stir to combine. Repeat with remaining flour and milk. Spoon into prepared pan. Smooth top. Bake for 30 minutes or until a skewer inserted in the centre comes out clean. Stand in the pan for 10 minutes. Turn out onto a wire rack. Cover with a clean tea towel. Set aside overnight.<br>Make icing: Sift icing sugar and cocoa into a bowl. Add butter and boiling water. Stir until smooth.<br>Cut the cake into 15 pieces. Place coconut in a dish. Using a fork, dip 1 piece of cake in icing. Shake off excess. Toss in coconut. Place on a wire rack over a baking tray. Repeat with remaining cake, icing and coconut. Stand for 2 hours or until set. Serve.<strong><em>(Maximilian Wong 7SCB)</em></strong> </div>]]></description>
